KIDS CAN COOK #3 Simple & No-cook! Rainbow Vegetable Roll Up Snacks

Here's what it looks like before rolling
This recipe is a great one to make with your children. They can easily help make it. Adults should do the chopping and kids can spread mix and scatter the vegetables on the tortilla.


Here we've taken a spinach tortilla and spread it with the cream cheese mix. Spread it thin, and layered on the vegetables.













After rolling and cutting into rounds

Rainbow Vegetable Roll Up Appetizers

Prep: 20 mins     Yield: 24 rounds

Ingredients:

1 C       Philadelphia Whipped Cream Cheese
2 t         Hidden Valley Ranch Mix
½ C      Carrots, trimmed, peeled, shredded (About 2 carrots)
½ C      Red Cabbage, shredded finely
½ C      Yellow Bell Pepper
½ C      Red Bell Pepper
½ C      Celery, chopped finely
½ C      Baby Spinach Leaves
4           9” Spinach Tortilla’s or wraps

Directions:

In a medium bowl combine cheese and dry ranch mix.
Lay each of the tortillas flat, spread with about ¼ cup of the cheese mix spread thinly and nearly to the edge on each tortilla.
In rows, side by side, arrange about 2 tablespoons of each the toppings, in the same direction.
From the long side, tightly roll each tortilla, then, slice crosswise into 2 inch rounds.

Lay flat on a platter and serve immediately.
